Are you able to maintain the effect from Mako Perfection with the use of another swift action to stave off the fatigued/exhaustion status effect?

No, once the effect ends, the fatigued/exhausted status takes effect, regardless if you spend another use.

Another question, but this time it's only tangentially related, looking at the fighter class it looks like the "fighter talents" are replacing the bonus feats that the pathfinder version of the class got. Is that correct?

You *could* say that, but its not technically correct.
